Cheesy Mashed Cauliflower: recipe for low carb diet

This is a low carb version of mashed potato. I adapted the “Better than Potatoes” Cheesy Cauliflower Puree recipe from ibreatheimhungry.com.

Ingredients:
1 head cauliflower (mine weighed 192 grams after cleaning and trimming)
3 Tbsp heavy cream (I used Anchor brand)
28 grams butter
1.5 oz cheddar cheese
salt and pepper to taste

Procedures:
Clean and trim cauliflower. Break into small pieces.
Microwave it with cream and butter for 3 minutes then toss ingredients to coat cauliflower with liquid.
Continue heating in microwave for another 3 minutes.
Add cheddar cheese then microwave for 1 minute.
Quickly transfer to blender. Blend until smooth and creamy.
Microwave for 1 minute, add salt and pepper to taste, then mix well.
Store in sealed container for up to 3 days in the fridge.

The mashed cauliflower’s aroma can take some getting used to. I think I won’t be able to eat it without the cream and cheese mixed in. xD I think the carb content is not that low, (I try to target 20 grams of carbs per day, tops) that’s why I don’t want to make it often.
